Power Balls are the chocolate balls in the middle of the tree.
1 c. pumpkin seeds
1 cup sunflower seeds
1 cup shredded coconut (try to use organic) (extra for rolling)
2 cups pitted dates, soaked
½ c. raw cacao powder
2 tbsp coconut oil
½ tsp sea salt
1 tsp vanilla
2 tbsp organic pure maple sugar
Soak the dates in hot water for 15 minutes to soften
Run seeds through chopper (mini processor) until small pieces but not until it becomes a powder.
Drain dates then very briefly run through chopper (only a few seconds)
Melt coconut oil and add sea salt and vanilla.
Combine all ingredients into a bowl and mix well.
Scoop a teaspoon (more or less depending on size of balls you want) and roll into ball shape.
Finish by rolling the balls in coconut.
Refrigerate for one hour on a cookie sheet lined with parchment paper.
