I know … I’m a nutritionist and eggnog is not the healthiest drink around. However … it is Christmas and I’m a firm believer that it’s ok to splurge ONCE IN A WHILE. Not every day. But once in a while, for a special occasion (Christmas, birthday, vacation), it’s ok. The topic of eggnog arose today and was asked for my recipe so I thought I’d share it with you as well. I usually add Bailey’s to mine … hubby adds Kahlua sometimes but mostly he loves it by itself. It’s super easy to make and takes less than 10 minutes. Once you try this, you’ll never buy the sugar laden, chemical crap that’s sold in cartons. So here you go ….
- 1/3 cup sugar
- 1/4 cup instant coffee, dissolved in 2 tablespoons of hot water
- 6 eggs, separated
- 4 cup milk
- 1 cup whipping cream
- Combine sugar, coffee, egg yolks and milk. Whisk together.
- Just before serving, whip up egg whites and whipping cream and then whisk into sugar mixture.
- Add alcohol if using, stir and serve.
It lasts 2 or 3 days in the fridge although it rarely lasts that long with my husband 😉
