I cannot take credit for this amazing soup but I really needed to share this with you.  I stumbled across this recipe at www.eatyourselfskinny.com.  I’ve always been intimated by making chicken soup.  I have no idea why other than making the broth and then making the soup just seemed like double the work and when time is limited, it’s not my idea of a good time.  You can use a pre-made broth or make your own.  Personally, I used the organic, low sodium pre-made broth.  It took me about 15 minutes to prep and another 30 minutes to cook and voila!  Chicken soup!  I would have NEVER thought to add chickpeas but it’s so delicious … even my hubby loves it!
