I am obsessed with coconut wraps. You can’t get a simpler product.  It’s made from coconut.  That’s it.  Sadly it does come at a hefty price … usually around the $8-$9 mark for 4 or 5 wraps.  I go through that in no time but being gluten intolerant, I need a healthier alternative to bread for my lunches.  One of my co-workers gave me a recipe for coconut flour wraps.  O.M.G.  Even hubby requested them instead of bread!!!  They truly are amazing.  So here we go ….


1/2 cup arrowroot or tapioca flour
2 organic, free-range eggs
3 tablespoons of coconut flour
1/2 teaspoon sea salt
1/2 cup water


Whisk contents together until fully incorporated.  Heat non-stick pan on medium-high heat.  Pour a scant ladle into pan and quickly roll pan to lightly coat with batter.  They’re almost a crepe.  Cook about 1 minute or so.  Flip and cook about another minute.  Cool thoroughly.

Makes 4 but this recipe can be doubled or quadrupled so you don’t have to make them every couple of days.  They freeze well and thaw in about 15 minutes. Just put parchment paper between each wrap. They’re very flexible and roll well.
