You can make as little or as much of this as you want, depending on your tastes.  I’ve included the number of veggies in brackets but this is totally just a guide.



  • Beets, grated (3)

  • Carrots, grated (4)

  • Zucchini, grated (1)

  • Apple, cut in bite sized chunks (1)

  • Raisins (handful)

  • Kelp Noodles (couple of handfuls, cut into small pieces)


  • Honey

  • Lemon

  • Extra Virgin Olive Oil

Combine salad ingredients in large bowl.

Whisk dressing ingredients together in a small bowl.  Toss in salad.

I love this recipe because it’s so versatile.  If you have a spiralizer, why not spiralize some or all of the veggies?
